I followed the recipe exactly as is, and did omit the optional red pepper flakes because I had enough heat from the Chorizo. I made it to top some Chorizo Tacos. When I think of family meals, one of the first things that comes to mind in tacos. Topped with a smoky and tangy chipotle lime coleslaw and dressed with all the goodies – Cilantro, avocado, onions, and lime. I made an avocado crema to go with the tacos, which perfectly balanced out the slaw and spicy chorizo. With a flavor-packed cilantro slaw and delicious avocado cream, these ground beef tacos are anything but boring.

If I had to pick one type of recipe to create 100 or more versions of it would be a toss up between tacos, bowls and pizza. Using pre-cooked beef makes this one a snap. I went the barbacoa tacos route this time – Mexican-style beef made in the slow cooker. Naturally gluten free with dairy free and vegan options.
